Crock pot "Rotisserie" Chicken

You'll need:

A whole chicken,an onion or 2, tin foil, and salt and pepper
Chunk chop your onion.

Ball up the tin foil and put at the bottom of your crock pot. It's just a platform so your chicken doesn't stew in the fat that falls off. Ewwwwww

I went ahead and threw half the onions in the bottom. For us, the onions are just in there for their aromatic properties.
Put your chicken on top of the foil. Salt and pepper it and top with the rest of the onions.

Cook on high for 5-6 hours. It's simple and delicious and sooo tender. I had to take a picture of it still in the crock pot because it falls apart as soon as you touch it.

We're having it in a salad tonight. We used to use the grocery store rotisserie chickens all the time for salads and pizzas and sandwiches. Now I save a good bit of money doing it this way. And these are usually larger than the grocery store ones. I can fit two in my crock pot and do that when they're on sale.
