Dinner one night this week.
You'll need:
1 pound Ground Beef
2 cloves Garlic, Minced
1 can Refried Beans (16 Oz)
1 teaspoon Salt
½ teaspoons Ground Cumin
⅓ cups Taco Sauce
1 cup Pitted Ripe Olives
12 whole Corn or Flour Tortillas
20 ounces, weight Enchilada Sauce
3 cups Shredded Cheese
Start by frying up your ground beef and garlic until beef is browned.
Now add in the beans, cumin, taco sauce, and olives.
Mix it all up into a disgusting mass.
Now take your tortillas and plop the meat mix in the middle.
Top with some cheese.
Fold them up and put seam side down into a baking dish and top with some enchilada sauce.
Bake at 350 for 20 minutes. Top with more cheese and put back in the oven for another 5 minutes.
This is my favorite enchilada recipe EVAH.

More time with Grandma and Grandpa
The Aquarium and others
The aquarium was awesome. We all had a fun time watching the animals. The penguins were a big hit. As was this massive thing:
Penguins
Nemo!
The sea otter was neat, too.
The had a play area. Brock was so happy to be free.
We went to an IMAX show on dinosaurs. Here's the ad:
Here's Brock showing what he thinks about it.
FOG
That's a flag on a ship.
Looking down the French Market.
Oops. Forgot a cute one from the zoo trip!
Breakfast at Cafe Du Monde. Riley was a big fan of the beignets.
It was a really great trip. Thanks Grandma and Grandpa for taking us!

New Orleans Zoo
Long long ago, when the grandparents were here for a visit, we took a quick trip down to New Orleans. We had a wonderful time. The kids did awesome and the adults did alright. Here are the pictures from our zoo trip. I'll be back with the aquarium and the crazy fog we encountered on the waterfront.
Riley liked the dinosaur at the entrance.
He got to spend a lot of time hanging out with Daddy.
White tigers!
We encountered a peacock at lunch that wasn't even a little bit scared of us or our screaming toddlers.
We went to the petty zoo and told Riley he could touch the animals. He proceeded to do just that. One touch a piece.
Duck
Duck
GOOSE!
Did you know there were albino alligators? It was a new one to me.
I love this shot with Grandpa.
Brock had a really good time on this hill.
Bummin' a ride on Daddy.
The elusive Grandparents....who were in charge of the little one.
It's a bird...
It's a seal...
It's Super Goonie!
