Dinner one night this week.

You'll need:
1 pound Ground Beef
2 cloves Garlic, Minced
1 can Refried Beans (16 Oz)
1 teaspoon Salt
½ teaspoons Ground Cumin
⅓ cups Taco Sauce
1 cup Pitted Ripe Olives
12 whole Corn or Flour Tortillas
20 ounces, weight Enchilada Sauce
3 cups Shredded Cheese

Start by frying up your ground beef and garlic until beef is browned.

Now add in the beans, cumin, taco sauce, and olives.

Mix it all up into a disgusting mass.
Photobucket

Now take your tortillas and plop the meat mix in the middle.
Photobucket

Top with some cheese.
Photobucket

Fold them up and put seam side down into a baking dish and top with some enchilada sauce.
Photobucket

Bake at 350 for 20 minutes. Top with more cheese and put back in the oven for another 5 minutes.

More time with Grandma and Grandpa

They were such a big help while they were here. They loved taking the kids out and about.

The Aquarium and others

The aquarium was awesome. We all had a fun time watching the animals. The penguins were a big hit. As was this massive thing:

It was a really great trip. Thanks Grandma and Grandpa for taking us!

New Orleans Zoo

Long long ago, when the grandparents were here for a visit, we took a quick trip down to New Orleans. We had a wonderful time. The kids did awesome and the adults did alright. Here are the pictures from our zoo trip. I'll be back with the aquarium and the crazy fog we encountered on the waterfront.

Riley liked the dinosaur at the entrance.

He got to spend a lot of time hanging out with Daddy.

White tigers!

We encountered a peacock at lunch that wasn't even a little bit scared of us or our screaming toddlers.

We went to the petty zoo and told Riley he could touch the animals. He proceeded to do just that. One touch a piece.
